Sunday-Morning CRUNCHY Bio Buttery Granola

Adding My Life Bio Buttery to this granola adds an additional flavour (and crunch!) without compromising on the nasties! Jump into the kitchen on a Sunday morning and prepare this FRESH for your Sunday brunch ++ you'll have enough to keep you going for the entire week, keeping you from turning to those convenient and not-so-healthy alternatives!

 

Serves: 12 portions

Ingredients:

3 cups oats and puffed super grains

2 tablespoons cinnamon

¼ teaspoon vanilla extract

1 tablespoon coconut oil 

¼ Bio Buttery (melted)

1 cup mixed seeds

½ cup goji berries

½ cup coconut flakes

Method:

  1. Preheat the oven to 200 degrees.

  2. Mix the oats and puffed super grains (we used puffed millet and puffed brown rice), cinnamon and vanilla extract into a bowl. The cinnamon should be evenly dispersed.

  3. In a separate bowl, melt the coconut oil and Bio Buttery.

  4. Add the melted liquid mixture to the dry grain mixture and stir until evenly coated.

  5. Line a baking tray and evenly distribute the granola mix across the tray.

  6. Bake for 20 or so minutes, or until lightly golden, rotating and mixing the granola on the tray every 5 minutes.

  7. When lightly golden, remove from the oven and add the mixed seeds and coconut flakes. Return to the oven and continue to bake until the coconut flakes too become golden - this should take 5 minutes.

  8. Remove from the oven and finally add the goji berries while still hot and on the tray!

  9. Allow to cool and ENJOY!

Note: This granola can be stored in an air-tight container or jar in the pantry for 2 weeks.
