Ingredients
1 onion, diced
4 cloves garlic, minced
2.5cm fresh ginger, minced
2-4 tbsp red curry paste (can be varied to taste)
1 green chilli, minced
1 tsp curry powder
1/2 tsp cayenne pepper
1/2 tsp ground black pepper
400mL coconut milk
2 cups BioCheese Cheddar Shred
2 cups lentil pasta (can be varied to preference)
Parsley (to garnish)
Method
Fry the onion, garlic and ginger in extra virgin olive oil in a large pot for 4-5 minutes.
Stir in the curry paste, curry powder and peppers. Cook on low heat for 2 minutes.
Add the coconut milk, BioCheese Cheddar Shred and lentil pasta to the broth. Cook on low heat for 8-10 minutes or until the lentil pasta is entirely cooked. Continue to stir during this time to ensure that all ingredients are thoroughly combined.
Garnish with a pinch of parsley and serve.
