Happy International Pancake Day Bio-lovers! Join in the celebration by whipping up some fluffy, plant-based cacao pancakes. Enjoy this healthy alternative guilt-free, topped with all of your favourites.
Serves: 2
Ingredients:
1/4 cup wholemeal spelt flour
1/4 cup plain flour
1 tbsp cacao powder
1 banana, mashed
5 tbsp almond milk
2 tsp baking powder
2 tablespoons flaxseed meal
5 tablespoons water
1 tsp ground cinnamon
1/2 tsp BioButtery
To serve
Cherries (or your fruit of choice)

Method:
Combine the flour, cacao powder, baking powder and cinnamon in a large bowl.
Make 2 flax-eggs by combining the flaxseed meal and water. Whisk lightly and allow to stand for 1-2 minutes.
In a separate bowl, add the flax-eggs to the flour mixture, followed by banana and milk.
Heat a non-stick fry pan until warm and add a slither of BioButtery. Pour roughly 2 tablespoons of mixture into the pan and cook for 2 minutes. Turn carefully and cook both sides. Repeat with entire mixture.
Top with cherries and BioCreamy - Original.
