BioCreamy Blueberry Cheesecake

Ingredients

  • 4 x BioCreamy packets (150g)

  • 1/2 cup pitted dates, soaked overnight

  • 1/4 cup raw almonds

  • 1/2 cup blueberries

Method

  1. Line a round 3” pan with baking paper and set aside.

  2. To make crust - combine pitted dates and almonds in a food processor, pulsing until a sticky mixture is obtained.

  3. Spread the mixture in the baking pan and evenly arrange.

  4. Spread BioCreamy on top of the crust and evenly arrange.

  5. Place the blueberries in a food processor and pulse lightly to obtain a puree. Pour over cheesecake, cover and freeze for a minimum of 3 hours.
