We don’t know about you, but we’ve been loving the versatility of zucchini at the moment! It’s a great Autumn vegetable with a high water content full of antioxidants and vitamin A. These zucchini ‘chips’ are a quick and easy snack to throw in the oven. Cut with a mandolin, they crisp up quickly and when sprinkled with BioCheese Grated Parmesano they are ridiculously moreish!
Ingredients
2 Zucchinis - Cut with a mandolin into small circles
BioCheese Grated Parmesano to sprinkle
Olive oil to drizzle
Salt & Pepper to season
Method
1) Preheat oven to 180°.
2) Place sliced zucchini onto a tray lined with baking paper.
3) Drizzle generously with olive oil and season with salt and pepper.
4) Sprinkle BioCheese Grated Parmesano over the top.
5) Cook in the oven for around 10 minutes or until the zucchini begins to darken around the edges.
