These mini quiches are a crowd favourite. Bursting with veggie goodness and chunks of delicious BioCheese Feta, they’re easy to make and will be gone in a flash!
Makes 10, depending on pan size.
Ingredients
1 small carrot – diced
½ red capsicum, diced
1 cup roasted pumpkin
75g BioCheese Feta, diced
Handful parsley
5 Free-range eggs
1/3 Cup of milk of your choice
½ Tsp sea salt
Method
1. Prehead oven to 180 and place 10 patty cases into a muffin tin and set aside.
2. Saute carrot and capsicum for 3 or so minutes until soft.
3. Combine with roast veggies, feta and parsley, stirring to combine.
4. Divide veggies into patty cases
5. Whisk egg, milk, salt and pepper together and pour in even amounts over vegetables in the patty cases.
6. Bake for 20 minutes, or until cooked through.
