Bio Cheese Halloumi and Freekeh Salad Jar

We have to admit we’re a bit late to the salad jar party, but we’re suckers for fresh produce in cute (and recycled) packaging! These salad jars with our Bio Cheese Halloumi are perfect for the kids or even your own lunch if you’re heading back to the office. With so many salad options out there we encourage you to make it your own, but here’s a great combo to start you off!

Ingredients

¼ Cup Lettuce

½ Cup Prepared Freekeh (Cook freekeh according to the instructions on your packet, different brands call for different methods)

¼ Cup Capsicum (Chopped)

1 Slab of BioCheese Halloumi (Fried and cut into cubes)

Handful of cherry tomatoes (Cut in half)

¼ Avocado (Cut into slices or cubes)

2 Tbsp of your favourite salad dressing

Splash of your preferred oil for frying

Optional

Add in some red onion for colour and flavour if you like!

 

Method

1)      Cook freekeh according to the instructions on the packet – this can take a bit of time.

2)      Cut up the rest of your ingredients and fry Halloumi with a splash of oil until golden.

3)      Cut Halloumi into cubes.

4)      In a wide jar, layer the ingredients starting with freekeh at the bottom.

Note: You should be able to make a few jars with this amount of ingredients.

5)      Right before eating add your dressing.

6)      Pop the lid back on the jar and shake to distribute the dressing.
