They’re oatmeal raisin, so they’re healthy… right? We love a good old lunch box treat. These vegan cookies made with our BioButtery are so chewy and delicious they’re sure to be a lunch time favourite.
Ingredients
1/2 cup (112g) BioButtery
1 cup (200g) Brown Sugar
1 Tbsp Golden Syrup
1 Tbsp Dark Molasses
1 Tbsp Vanilla Extract
1 and 1/2 cups (144g) Rolled Oats
1 cup (125g) All Purpose Flour
1 cup (80g) Dessicated Coconut
1 Tsp Baking Soda
1/2 Tsp Salt
1 Tsp Cinnamon
2 Tbsp Soy Milk (or any other non-dairy milk)
3/4 cup (105g) Small Raisins
Method
1. Preheat the oven to 180°C and line a baking tray with baking paper.
2. Add BioButtery and brown sugar to a large mixing bowl. Use an electric mixer to combine.
3. Add golden syrup, molasses and vanilla. Mix to combine.
4. In a separate bowl, add rolled oats, flour, dessicated coconut, baking soda, salt and cinnamon and mix together.
5. Add the dry ingredients to the wet ingredients and mix in by hand until crumbly.
6. Add the soy milk and mix again. When properly mixed you should be able to roll the dough into a ball and have it stick together nicely.
7. Add in the raisins and combine.
8. Roll dough into balls and place on the lined baking tray. You should end up with roughly 20 cookies. Be sure to check that the raisins are evenly distributed.
9. Cook for 15 minutes – the tops should be golden brown but the cookies will be soft in the middle.
10. Allow cookies to rest and cool before moving from the baking tray.
