Chunky Chocolate Chip Cookies

Presenting these slightly crispy, totally chewy sweet treats full of chocolatey chunks that will leave you wanting more. Easily adaptable to be entirely vegan and/or gluten free.

Ingredients

120g BioButtery

180g Coconut sugar

1 Banana, mashed

150g Plain flour (can substitute for gluten-free)

40g Self-raising flour (can substitute for gluten-free)

1 Tsp bicarbonate of soda

30g Coca powder

¼ Tsp salt

120g chocolate block, chopped (can substitute for vegan chocolate)

Method

1. Preheat oven to 180°C and line a baking tray with baking paper.

2. Beat BioButtery and sugar in a bowl.

3. Add mashed banana and all remaining ingredients except for the chocolate and combine with a wooden spoon or mixer on low.

4. Fold in chocolate chunks

5. Make roughly 20g dough balls. Place evenly on tray and slightly flatten.

6. Bake for around 15 minutes and allow to cool before lifting off tray.
