A classic winter pasta concoction with a twist and an easy way to use up whatever pasta you might have lying around the pantry. Creamy sauce mixed with garlicy mushrooms with a hidden chilli kick that you won’t be expecting!
Ingredients
1 Packet of BioCreamy
100g BioCheese Grated Parmesano
500g Mushrooms, sliced
1 Tbsp BioButtery
300g Fresh spinach
500g Pasta of your choice
1 Tsp chilli flakes
2Tbsp olive oil
100g hoisin sauce
2 Tbsp sesame oil
1 Tbsp garlic chilli paste
1 Tsp harissa paste
Parsley to garnish
Method
1. Combine olive oil, hoisin sauce, sesame oil, garlic chilli paste and harissa paste in a bowl and whisk together. Leave to the side.
2. Boil pasta according to packet instructions. Once cooked, sieve and keep ½ cup of pasta water to add to the sauce later.
3. For the sauce, sauté mushrooms in BioButtery for 5-7 minutes until golden. Add spinach for a further 2 – 3 minutes and pour over garlic concoction from step 1. Add BioCreamy and remaining pasta water from step 2 and stir thoroughly to combine.
4. Add pasta to the sauce and top with BioCheese Grated Parmesano and parsley.
