These quick, easy and healthy fritters are a great way to use up veggies such as zucchini, carrot and pumpkin. A vegan, plant-based and gluten-free alternative, our fritters use zucchini and our BioCheese Original Block to stick the mixture together resulting in a golden fritter ready for whatever toppings you desire. It’s the ultimate brunch menu item reimagined with Bio-goodness!
Ingredients
4 Medium zucchini
1 + ½ Tbsp flaxseed meal
80ml (1/3 Cup) water
2 Tsp olive oil with extra to spare for frying
3 Green shallots, thinly sliced
2 Cloves of garlic, finely chopped
55g (1/2 Cup) finely grated BioCheese Original Block
75g (1/2 Cup) self-raising flour (can substitute for self raising gluten-free flour)
1 Pinch cayenne pepper
Your choice of toppings – we’ve used crumbled BioMarinated Feta, wholegrain mustard and some leafy greens but any veggies or herbs such as mint would work nicely.
Method
1) Coarsely grate zucchini and place in a colander. Season with salt and pepper and toss to combine. Set aside for a few minutes before taking handfuls of zucchini and squeezing out as much liquid as possible. You can try and do this with paper towel too. Once as much liquid as possible is squeezed out, transfer to a large mixing bowl.
2) Place flaxseed and water in a bowl and stir to combine. Set aside.
3) Heat oil in a non-stick pan over a high heat. Cook shallots and garlic, stirring consistently for 2 minutes or until soft.
4) Add the contents of the pan to your bowl of zucchini. Add the flaxseed mixture and the grated cheese. Sift over flour and cayenne pepper, then mix well to fully combine.
5) In your non-stick pan, pour enough oil to coat the surface and reach a few cm up the side of the pan in order to shallow fry the batter. Over medium heat, drop ¼ cups of the mixture into the oil and spread out to roughly 8cm rounds. Cook for 3 minutes before flipping the fritter, then cook through until golden.
6) Transfer to a plate lined with paper towel to soak up any excess oil or liquid. Repeat with remaining mixture.
7) Garnish with your choice of toppings. We think our mix of BioMarinated feta and wholegrain mustard goes down a treat!
